Microsoft may have an exclusive on some EA games, but not all. Madden NFL 07 for Wii is gonna have exclusive features only available on the Wii, different from all other Madden NFL 07 releases on other systems, and EA is pushing the Wii version big time. From NP issue 208 pg 57:

Die-hard EA fans will not be sticking with the Xbox 360, they will also be purchasing a Wii.
The article also mentioned that Schappert, the company's senior VP, is a self proclaimed die-hard Nintendo fan, so EA will NEVER go exclusive to Xbox 360 or PS3 as long as he is with EA.
Personally, all things considered, I believe the Wii will win based purely on current hype, innovative technology, and lists of 3rd party software developers behind the next-gen consoles.
